Cauliflower Salad. Cauliflower can be eaten raw. If you prefer it cooked, steam the cauliflower for 5 minutes. This salad is comforting. Ingredients: 1 small or half a head of cauliflower, chopped into small pieces; 50g dates (dried or fresh); 2 bananas, sliced; a packet of alfalfa sprouts; tofu or yogurt dressing. If you steam the cauliflower for 5 minutes, immediately remove it from the steamer and cool it in cold water. After cooling, combine all the ingredients in a bowl, add dressing, and it's ready to eat.
Beetroot Salad. 225g raw beetroot, peeled and chopped; 2 stalks of celery, chopped; 2 large sweet apples, cored and chopped; balsamic vinegar dressing. Mix the beetroot, celery, and apples together, then add the dressing and serve.
Spinach and Cauliflower Salad. This salad requires fresh cauliflower, ensuring each floret is tender and without tough stems. Ingredients: 225g fresh potatoes, cooked and cooled with mint; 1 head of cauliflower, washed and chopped; 450g spinach, washed and torn into strips; 2-3 cored and sliced sweet apples; 50g sunflower seeds or soy cheese, diced or sliced; balsamic vinegar dressing. If the potatoes are small, there's no need to cut them. If they are large, slice them. Then mix the potatoes with the other ingredients and add the balsamic vinegar dressing.
